Aquafaba Chocolate Mousse


Aquafaba - reserved liquid from 1x can of tinned chickpeas

1 tsp cream or tartar

120g (2x 60g bars) Conscious Dark Side 75%,

100g coconut sugar



1. Start by emptying the coconut sugar into a blender. Blitz the sugar until it becomes super fine -

almost like powdered sugar.

2. Empty the liquid from one tin of chickpeas into a large mixing bowl. Using an electric whisk,

start whipping the liquid until it turns frothy. At this point adding 1 tsp of cream of tartar can help it

to thicken, but it is optional.

3. Gradually add in the powdered coconut sugar. Keep whisking for 10 - 15 minutes until thick.

4. Gently fold through the melted chocolate and spoon into ramekins or glasses. Leave to chill in

the fridge for at least an hour before serving.
